You Say Sambusa, I Say YUM!
School cafeterias around Minnesota are serving Sambusas. Sambusas are a delicious Somali pastry that can be filled with meat, lentils and veggies. Many of the Sambusas being served in Minnesota schools are made in Minnesota by a company called Hoyo, which means mother in Somali.
St. Paul Public Schools serves Sambusas in their lunch room and a food truck!
Sambusas are a delicious meal eaten alone or with bariis iskukaris rice and chickpea salad.

Chickpea Salad
Chickpea Salad goes great with Sambusas and is easy to make! You can delete any of the ingredients or add in extra!
INSTRUCTIONS:
- Whisk together the dressing.
- Add all the salad ingredients to a large bowl and toss lightly with the dressing.
DRESSING:
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh squeezed lemon juice
- salt and pepper to taste
INGREDIENTS:
- 15.5 ounce can of chickpeas
- 1/4 cup chopped tomatoes
- 1/4 cup minced red onion
- 1/3 cup finely chopped cucumber
- 1 clove garlic, very finely minced
- 1/2 cup minced parsley leaves
